Ingredients
  

Meat and Vegetables
  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, no salt added
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 1 cup low-sodium beef broth
Garnish
  • Fresh parsley for garnish

Method
 

  1. Brown the ground beef in a skillet until cooked; drain excess fat.
  2. Add onion and garlic; sauté until translucent.
  3. Stir in tomatoes, peppers, zucchini, spices, salt, and pepper.
  4. Pour in beef broth; simmer for 15-20 minutes until vegetables are tender.
  5. Adjust seasoning; serve hot garnished with parsley.
