Eggs
  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup chopped spinach
  • 0.5 cup diced bell peppers
  • 0.5 cup diced onions
  • 1 cup shredded low-fat cheese (e.g., mozzarella or cheddar)
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon paprika (optional)
Cooking spray or olive oil for greasing

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Whisk eggs, cottage cheese, garlic powder, salt, black pepper, and paprika until combined.
  3. Stir in spinach, bell peppers, and onions. Grease a 9x9 inch dish.
  4. Pour mixture into dish, sprinkle cheese on top, and bake for 30-35 minutes.
  5. Let cool briefly, then slice and serve.
