Healthy Enchilada Skillet

Ingredients
  

Olive oil
  • 2 tablespoons Olive oil
Vegetables
  • 1 medium Onion diced
  • 2 any color Bell peppers diced
Garlic
  • 3 cloves Garlic minced
Beans and Corn
  • 1 can (15 oz) Black beans drained and rinsed
  • 1 cup Corn fresh, frozen, or canned
Sauces and Tortillas
  • 1 can (14.5 oz) Diced tomatoes undrained
  • 1 cup Enchilada sauce
  • 4 pieces Tortillas cut into strips
  • 1 cup Cheese shredded (cheddar or Mexican blend)
Garnish
  • Cilantro chopped

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Sauté onion and bell peppers for 5 minutes, then add garlic and cook 1-2 minutes.
  3. Add black beans and corn, cook 2-3 minutes.
  4. Stir in diced tomatoes and enchilada sauce, simmer 5 minutes.
  5. Layer tortilla strips, top with cheese, cover and cook until melted, about 5 minutes.
  6. Garnish with chopped cilantro and serve warm.
