  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots chopped
  • 2 stalks celery chopped
  • 1 red bell pepper chopped
  • 14.5 oz canned diced tomatoes undrained
  • 4 cups vegetable broth low sodium
  • 1 cup cooked chickpeas rinsed and drained
  • 0.5 cup whole wheat pasta small shapes like ditalini
  • 0.5 cup chopped fresh parsley
  • 0.25 cup chopped fresh basil
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes optional
  • Salt and pepper to taste
  • 1 lemon juiced (optional, for serving)
  • Spinach or kale optional, for added nutrients

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, celery, and bell pepper. Cook until softened, about 5-7 minutes.
  3. Stir in diced tomatoes, vegetable broth, chickpeas, pasta, parsley, basil, oregano, and red pepper flakes (if using).
  4. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until pasta is cooked.
  5. If using, stir in spinach or kale during the last 5 minutes of cooking.
  6. Season with salt and pepper to taste.
  7. Serve hot, with a squeeze of lemon juice if desired.

Notes

Feel free to add other vegetables you enjoy, such as zucchini or green beans. For a richer flavor, use homemade vegetable broth.
