  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, sliced for garnish
  • 1/4 cup chicken broth or white grape juice Optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Whisk together olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper.
  3. Place chicken breasts in a baking dish.
  4. Pour lemon herb mixture over chicken, coating both sides.
  5. Optional: Add chicken broth or white grape juice to the baking dish.
  6. Arrange lemon slices around the chicken.
  7. Bake for 20-25 minutes, until chicken is cooked through (165°F/74°C).
  8. Let the chicken rest before serving. Garnish with fresh herbs and lemon slices.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before baking.
