Method
- Cook rice with broth. Set aside.
- Heat oil in skillet over medium heat.
- Add onion and bell pepper; cook 5-7 minutes.
- Add garlic; cook 1 minute.
- Stir in beans, sun-dried tomatoes, and olives.
- Cook 3-5 minutes, stirring occasionally.
- Add rice to skillet and stir.
- Stir in parsley and lemon juice.
- Season with salt and pepper.
- Serve warm with feta (optional).
Notes
For a richer flavor, use homemade vegetable broth. You can also add other vegetables like zucchini or eggplant.
