  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1/2 cup chopped sun-dried tomatoes (oil-packed, drained)
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons lemon juice
  • to taste Salt and pepper
  • Optional feta cheese for topping

Method
 

  1. Cook rice with broth. Set aside.
  2. Heat oil in skillet over medium heat.
  3. Add onion and bell pepper; cook 5-7 minutes.
  4. Add garlic; cook 1 minute.
  5. Stir in beans, sun-dried tomatoes, and olives.
  6. Cook 3-5 minutes, stirring occasionally.
  7. Add rice to skillet and stir.
  8. Stir in parsley and lemon juice.
  9. Season with salt and pepper.
  10. Serve warm with feta (optional).

Notes

For a richer flavor, use homemade vegetable broth. You can also add other vegetables like zucchini or eggplant.
