Ingredients
  

Steak
  • 1 lb sirloin steak cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • Salt and pepper to taste
Bowl Ingredients
  • 2 cups cooked quinoa
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 0.5 cup crumbled feta cheese
  • 0.25 cup Kalamata olives halved
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh parsley chopped
Optional
  • Lemon wedges for serving
  • Hummus optional
  • Tzatziki sauce optional

Method
 

  1. Toss steak with olive oil, oregano, garlic powder, salt, and pepper.
  2. Heat skillet over medium-high heat. Cook steak for 3-5 minutes.
  3. Prepare quinoa according to package directions.
  4. Divide quinoa among bowls.
  5. Top with steak, cucumber, tomatoes, feta, olives, and red onion.
  6. Garnish with parsley and serve with lemon wedges.
  7. Optional: Add hummus or tzatziki sauce.

Notes

Adjust the amount of feta cheese and olives to your preference for a lower sodium option.
