Method
- Combine shrimp, avocados, red onion, cilantro, and jalapeno (if using) in a bowl.
- Whisk lime juice and olive oil in a small bowl.
- Pour dressing over the shrimp mixture.
- Gently toss to combine, being careful not to mash the avocado.
- Season with salt and pepper to taste.
- Refrigerate for at least 15 minutes.
- Serve chilled as a salad, in lettuce wraps, or as a topping.
Notes
For a spicier kick, leave the seeds in the jalapeno or add a pinch of red pepper flakes.
