Ingredients
  

Salad Ingredients
  • 1 pound cooked shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cilantro, chopped
Dressing
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 jalapeno, seeded and minced (optional) optional
  • Salt and pepper to taste
Optional Vegetables
  • Cherry tomatoes, cucumber, or bell pepper for added vegetables Optional

Method
 

  1. Combine shrimp, avocados, red onion, cilantro, and jalapeno (if using) in a bowl.
  2. Whisk lime juice and olive oil in a small bowl.
  3. Pour dressing over the shrimp mixture.
  4. Gently toss to combine, being careful not to mash the avocado.
  5. Season with salt and pepper to taste.
  6. Refrigerate for at least 15 minutes.
  7. Serve chilled as a salad, in lettuce wraps, or as a topping.

Notes

For a spicier kick, leave the seeds in the jalapeno or add a pinch of red pepper flakes.
