Method
- Whisk together lemon juice, red grape juice vinegar, minced garlic, oregano, salt, and pepper.
- Marinate steak in half of the vinaigrette for at least 15 minutes.
- Heat olive oil in a skillet over medium-high heat.
- Cook steak for 5-7 minutes, or until desired doneness. Remove and set aside.
- Add bell peppers, red onion, and zucchini to the skillet. Cook for 5-7 minutes, or until tender-crisp.
- Add cherry tomatoes and olives to the skillet and cook for another 2 minutes.
- Combine cooked quinoa, cooked vegetables, and steak in a bowl.
- Pour the remaining vinaigrette over the bowl and toss to combine.
- Top with feta cheese and fresh parsley.
- Serve immediately.
Notes
For a spicier kick, add a pinch of red pepper flakes to the vinaigrette.
