Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes, peeled and grated
Onion
  • 1 small small onion, finely chopped
Olive Oil
  • 2 tablespoons olive oil
Salt and Pepper
  • to taste salt and pepper
Paprika
  • 1/2 teaspoon teaspoon paprika (optional)
Fresh Herbs
  • for garnish fresh herbs for garnish (optional)

Method
 

  1. Rinse grated sweet potatoes, drain, and pat dry.
  2. Mix sweet potatoes, onion, salt, pepper, and paprika.
  3. Heat 1 tablespoon olive oil in skillet over medium heat.
  4. Add half of mixture, flatten, and cook 5-7 mins per side until golden.
  5. Repeat with remaining mixture, drain on paper towels, garnish, and serve.

Notes

Ensure sweet potatoes are well drained to prevent sogginess.
