  • 2 medium sweet potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon smoked paprika (optional)
  • fresh herbs for garnish (optional)

Method
 

  1. Press grated sweet potatoes in a towel to remove moisture.
  2. Mix sweet potatoes, onion, salt, pepper, garlic powder, and paprika.
  3. Heat oil in a skillet over medium heat.
  4. Cook mixture 5-7 mins per side until golden.
  5. Drain on paper towel, garnish with herbs, and serve.
