  • 2 medium sweet potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper
  • for garnish fresh parsley optional

Method
 

  1. Combine grated sweet potatoes and chopped onion in a bowl.
  2. Add olive oil, garlic powder, paprika, salt, and pepper; mix well.
  3. Heat a skillet over medium heat and add a little olive oil.
  4. Form mixture into patties and cook 5-7 minutes per side until crispy.
  5. Remove, cool slightly, garnish with parsley, and serve.

Notes

For extra flavor, add a squeeze of lemon or a dash of hot sauce.
