Method
- Preheat oven to 400°F (200°C). Cut squash in half, scoop out seeds.
- Drizzle with olive oil, season, and place cut-side down on a baking sheet.
- Roast for 45-60 minutes, until easily pierced with a fork.
- Brown ground turkey/beef in skillet, drain excess grease.
- Stir in taco seasoning and water. Simmer for 5-7 minutes.
- Let squash cool slightly, shred into spaghetti-like strands.
- Stir in salsa, black beans, and corn into the meat mixture.
- Spoon meat mixture into squash boats.
- Sprinkle with cheese, if desired.
- Bake for 5-10 minutes, until cheese is melted and bubbly (if using).
- Top with your favorite taco toppings. Serve immediately.
Notes
For a vegetarian option, substitute the ground turkey or beef with lentils or crumbled tofu.
