Ingredients
  

Squash
  • 1 large spaghetti squash
Filling
  • 1 tablespoon olive oil
  • 1 pound ground turkey or beef
  • 1 packet taco seasoning
  • 0.5 cup water
  • 0.5 cup salsa
  • 0.25 cup black beans, rinsed and drained
  • 0.25 cup corn
  • 0.25 cup shredded cheddar cheese (optional)
Toppings (Optional)
  • avocado, sour cream, cilantro

Method
 

  1. Preheat oven to 400°F (200°C). Cut squash in half, scoop out seeds.
  2. Drizzle with olive oil, season, and place cut-side down on a baking sheet.
  3. Roast for 45-60 minutes, until easily pierced with a fork.
  4. Brown ground turkey/beef in skillet, drain excess grease.
  5. Stir in taco seasoning and water. Simmer for 5-7 minutes.
  6. Let squash cool slightly, shred into spaghetti-like strands.
  7. Stir in salsa, black beans, and corn into the meat mixture.
  8. Spoon meat mixture into squash boats.
  9. Sprinkle with cheese, if desired.
  10. Bake for 5-10 minutes, until cheese is melted and bubbly (if using).
  11. Top with your favorite taco toppings. Serve immediately.

Notes

For a vegetarian option, substitute the ground turkey or beef with lentils or crumbled tofu.
