  • 1.5 lbs Ground Beef (80/20 or leaner)
  • 2 lbs Potatoes (Russet or Yukon Gold), peeled and cubed
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Olive Oil
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary
  • 0.5 tsp Paprika
  • 0.25 tsp Red Pepper Flakes (optional)
  • 14.5 oz Diced Tomatoes, undrained
  • 1 cup Beef Broth
  • Salt and Pepper to taste
  • 1 cup frozen peas or mixed vegetables Optional

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook until browned. Drain excess grease.
  3. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute.
  4. Stir in thyme, rosemary, paprika, and red pepper flakes (if using).
  5. Add potatoes, diced tomatoes, and beef broth. Season with salt and pepper.
  6. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, until potatoes are tender.
  7. If using, stir in frozen peas or mixed vegetables during the last 5 minutes.
  8. Taste and adjust seasonings as needed.
  9. Serve hot. For meal prep, divide into containers and store in the refrigerator for up to 4 days.

Notes

For a richer flavor, brown the ground beef with a tablespoon of tomato paste before adding the other ingredients.
