Method
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook until browned. Drain excess grease.
- Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute.
- Stir in thyme, rosemary, paprika, and red pepper flakes (if using).
- Add potatoes, diced tomatoes, and beef broth. Season with salt and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, until potatoes are tender.
- If using, stir in frozen peas or mixed vegetables during the last 5 minutes.
- Taste and adjust seasonings as needed.
- Serve hot. For meal prep, divide into containers and store in the refrigerator for up to 4 days.
Notes
For a richer flavor, brown the ground beef with a tablespoon of tomato paste before adding the other ingredients.
