  • 1 lb ground beef, 85% lean
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup frozen corn kernels
  • 2 cloves garlic, minced
  • 14.5 oz diced tomatoes, undrained 1 can
  • 0.5 cup beef broth
  • 1 cup cooked rice (white or brown)
  • 1 tsp paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp dried oregano
  • 0.25 tsp black pepper
  • 0.75 tsp salt, to taste
  • 1 cup shredded cheddar cheese
  • 2 tbsp fresh parsley or cilantro, chopped (optional)

Method
 

  1. Heat skillet over medium-high heat. Cook ground beef until browned, about 5-6 minutes. Drain fat.
  2. Add onion, bell pepper, and zucchini. Cook 3-4 minutes until softened.
  3. Stir in garlic and cook for 30 seconds until fragrant.
  4. Add corn, diced tomatoes, beef broth, rice, paprika, cumin, oregano, pepper, and salt. Stir well.
  5. Lower heat, cover, and simmer for 10 minutes, stirring occasionally.
  6. Sprinkle cheese over the top. Cover and cook for 2-3 minutes until cheese melts.
  7. Remove from heat. Garnish with parsley or cilantro and serve.

Notes

For a spicier dish, add a pinch of red pepper flakes or a dash of hot sauce.
