Method
- Heat skillet over medium-high heat. Cook ground beef until browned, about 5-6 minutes. Drain fat.
- Add onion, bell pepper, and zucchini. Cook 3-4 minutes until softened.
- Stir in garlic and cook for 30 seconds until fragrant.
- Add corn, diced tomatoes, beef broth, rice, paprika, cumin, oregano, pepper, and salt. Stir well.
- Lower heat, cover, and simmer for 10 minutes, stirring occasionally.
- Sprinkle cheese over the top. Cover and cook for 2-3 minutes until cheese melts.
- Remove from heat. Garnish with parsley or cilantro and serve.
Notes
For a spicier dish, add a pinch of red pepper flakes or a dash of hot sauce.
