Ingredients
  

Meat
  • 1 pound sausage (Italian or breakfast sausage)
  • 1 medium onion, diced
  • 1 bell pepper, diced bell pepper
  • 2 cups diced potatoes (fresh or frozen)
Eggs and Dairy
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste Salt and pepper Salt and pepper
Garnish
  • optional Fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook sausage in a skillet until browned; add onion and bell pepper, sauté until softened.
  3. Add potatoes to the skillet and cook until tender or add frozen directly.
  4. Whisk eggs, milk, garlic powder, paprika, salt, and pepper in a bowl.
  5. Layer sausage mixture in a greased 9x13 dish, pour egg mixture over, sprinkle with cheese.
  6. Bake for 25-30 minutes until eggs are set and top is golden. Garnish with parsley before serving.

Notes

For extra flavor, add your favorite herbs or hot sauce.
