Meat
  • 1 pound sausage (Italian or breakfast sausage)
  • 1 medium onion, diced
  • 1 bell pepper, diced bell pepper
  • 2 cups diced potatoes (fresh or frozen)
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method
 

  1. Preheat oven to 375°F (190°C). Cook sausage until browned, then sauté onion and bell pepper until softened.
  2. Add potatoes to the skillet and cook until tender or add frozen directly. Whisk eggs, milk, garlic, paprika, salt, and pepper.
  3. Layer sausage mixture in a greased baking dish, pour egg mixture over, and sprinkle with cheese.
  4. Bake for 25-30 minutes until eggs are set and top is golden. Garnish with parsley before serving.

Notes

For a healthier option, use lean sausage and low-fat cheese.
