Ingredients
  

Meat
  • 1 pound turkey sausage, casings removed
Vegetables
  • 4 cups fresh spinach, chopped
Dairy & Eggs
  • 8 large eggs
  • 1 cup milk (or milk alternative)
  • 1 cup shredded cheddar cheese
Spices & Oils
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon olive oil (for cooking sausage)
Others
  • Cooking spray (for greasing the casserole dish)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook turkey sausage in a skillet with olive oil until browned, then add spinach and cook until wilted. Remove from heat.
  3. Whisk eggs, milk, salt, pepper, garlic powder, and onion powder in a bowl.
  4. Grease a 9x13 inch dish, spread sausage and spinach, pour egg mixture over, and sprinkle cheese.
  5. Bake for 25-30 minutes until eggs are set and top is golden. Cool slightly before serving.

Notes

Use lean turkey sausage for a healthier option.
