Ingredients
  

Protein
  • 2 lbs shredded chicken
  • 1 cup enchilada sauce (sugar-free)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • 1 tsp cumin
  • 1 tsp garlic powder
  • ½ tsp chili powder
Garnish
  • Fresh cilantro for garnish

Method
 

  1. Add shredded chicken, enchilada sauce, sour cream, and spices to the crockpot. Stir well.
  2. Cook on low for 3-4 hours.
  3. Sprinkle shredded cheese over the top and cook for 15-20 minutes until melted.
  4. Garnish with fresh cilantro and serve.

Notes

You can add extra vegetables or adjust spice levels to taste.
