  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

  • 8 small whole wheat tortillas
  • 1 cup black beans, drained and rinsed
  • 1 cup Greek yogurt
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • Fresh cilantro for garnish

Method
 

  1. Heat olive oil in a skillet over medium heat.
  2. Add diced chicken and season with spices; cook for 6-8 minutes until fully cooked.
  3. Warm tortillas in a separate pan or microwave.
  4. Assemble tacos with chicken, beans, yogurt, lettuce, tomatoes, and avocado; garnish with cilantro.
