  • 1 cup cottage cheese
  • 6 large eggs
  • 1 cup spinach, chopped
  • 0.5 cup bell pepper, diced
  • 0.5 cup onion, diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Whisk eggs and cottage cheese until combined.
  3. Add spinach, bell pepper, onion, cheese, garlic powder, salt, and pepper; stir.
  4. Grease a baking dish with olive oil and pour in mixture.
  5. Bake for 30-35 minutes until set and golden.
  6. Let cool slightly, then slice and serve.

Notes

For extra flavor, add herbs or hot sauce.
