- Preheat your oven to 400°F (200°C).

- Remove chicken and set aside. Add broth, cream, and cheeses to skillet. Stir until smooth.
- Season sauce with thyme, rosemary, salt, and pepper. Simmer.
- Incorporate potatoes into sauce, then return chicken.
- Transfer mixture to a baking dish.
- Bake for 25-30 minutes, until chicken is cooked and potatoes are tender.
- Let it cool for a few minutes.
- Garnish with fresh parsley before serving.
Notes
For a richer flavor, use bone-in, skin-on chicken thighs. Adjust the amount of cheese to your preference.
