  • 4 medium-sized russet potatoes peeled and cubed
  • 2 tablespoons olive oil
  • 6 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Sauté garlic in olive oil until fragrant.
  3. Add diced chicken and cook until browned.
  4. Remove chicken and set aside. Add broth, cream, and cheeses to skillet. Stir until smooth.
  5. Season sauce with thyme, rosemary, salt, and pepper. Simmer.
  6. Incorporate potatoes into sauce, then return chicken.
  7. Transfer mixture to a baking dish.
  8. Bake for 25-30 minutes, until chicken is cooked and potatoes are tender.
  9. Let it cool for a few minutes.
  10. Garnish with fresh parsley before serving.

Notes

For a richer flavor, use bone-in, skin-on chicken thighs. Adjust the amount of cheese to your preference.
