  • 2 pounds ground beef 80/20 blend recommended
  • 3 medium russet potatoes peeled and diced into 1-inch cubes
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt adjust to taste
  • 0.25 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 0.5 cup beef broth or water
  • fresh parsley chopped, for garnish (optional)

Method
 

  1. Dice potatoes, rinse, and pat dry.
  2. Cook potatoes in olive oil until golden brown; set aside.
  3. Brown ground beef, drain excess fat.
  4. Cook onion and garlic, then mix with beef.
  5. Add spices and tomato paste, cook until fragrant.
  6. Add broth, potatoes, simmer until potatoes are tender.
  7. Adjust seasoning, garnish with parsley, and serve.

Notes

For a spicier dish, add a pinch of red pepper flakes.
