Ingredients
  

Dry ingredients
  • 1.5 cups all purpose flour
  • 0.5 cup vanilla protein powder
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 pinch salt
Wet ingredients
  • 0.25 cup plain Greek yogurt (full fat)
  • 1.25 cups milk
  • 1 egg egg
  • 2 teaspoons vanilla extract
  • 2 tablespoons olive oil
  • 1 tablespoon maple syrup (optional) see note
Additional
  • as needed non-stick spray

Method
 

  1. Mix dry ingredients in a bowl.
  2. Whisk wet ingredients in another bowl.
  3. Combine wet and dry, mix until just combined.
  4. Heat skillet, lightly spray with non-stick spray.
  5. Pour ΒΌ cup batter, cook 2-3 mins, flip, cook 2-3 mins, serve.

You can add toppings like fresh fruit or nuts for extra flavor.
