Ingredients
  

Vegetables
  • 4 medium zucchinis, sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
Cheeses
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup mayonnaise
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
Seasonings
  • to taste Salt and pepper
Garnish
  • optional Fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Sauté onion and garlic in olive oil until translucent and fragrant.
  3. Add zucchini slices; cook until tender. Season with Italian seasoning, salt, and pepper.
  4. Mix zucchini, tomatoes, cheeses, sour cream, mayonnaise, and bacon (if using) in a bowl.
  5. Transfer mixture to baking dish, top with breadcrumbs and Parmesan, then bake for 20-25 minutes until golden.

Notes

For a vegan version, omit cheese and bacon or substitute with plant-based alternatives.
