Ingredients
  

Meat
  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups frozen mixed vegetables
  • 2 cups shredded cheddar cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 2 cups cooked rice

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cook ground beef until browned; drain fat. Add onion and garlic, cook until translucent.
  3. Stir in tomatoes, beans, vegetables, salt, pepper, and paprika; cook 5 minutes.
  4. Combine beef mixture with cooked rice in a casserole dish. Top with cheese.
  5. Cover with foil and bake 25 minutes. Remove foil and bake 10 more minutes until bubbly.

Notes

Feel free to add hot sauce or herbs for extra flavor.
