Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes about 4 cups mashed
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows optional
  • 1/2 cup chopped pecans or walnuts optional

Method
 

  1. Peel, chop, boil sweet potatoes until tender, then mash.
  2. Mix mashed sweet potatoes with sugar, milk, melted butter, eggs, vanilla, cinnamon, nutmeg, and salt.
  3. Transfer mixture to a greased crockpot.
  4. Cook on low for 4-6 hours until set and heated through.
  5. Optional: Top with marshmallows and nuts during last 30 minutes.

Notes

For a richer flavor, toast the nuts before adding.
