Ingredients

  • 1.5 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
Wet Ingredients
  • 1.25 cups milk (whole or buttermilk)
  • 1 large egg
  • 2 tablespoons unsalted butter (melted)
  • 1 teaspoon vanilla extract
Additional Flavors & Mix-ins
  • 0.5 teaspoon cinnamon
  • 0.5 cup chocolate chips
  • 0.5 cup blueberries fresh or frozen
  • 0.25 teaspoon nutmeg for subtle spice

Method
 

  1. Whisk together dry ingredients in a large bowl.
  2. Mix wet ingredients in a separate bowl until smooth.
  3. Pour wet into dry, stir gently until just combined.
  4. Heat a skillet over medium heat and lightly grease.
  5. Pour ΒΌ cup batter for each pancake; cook until bubbles form, then flip and cook until golden.
  6. Serve warm with toppings of choice.

Notes

For fluffier pancakes, do not overmix the batter.
