Ingredients
  

Protein
  • 1 lb boneless, skinless chicken thighs or breasts
Grains
  • 1 cup long-grain rice
Broth & Sauces
  • 2 cups chicken broth
  • ½ cup BBQ sauce (your choice)
  • ¼ cup honey
Spices & Vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste Salt and pepper to taste
  • 1 cup mixed vegetables (frozen or fresh)
  • Chopped green onions or parsley Chopped green onions or parsley

Method
 

  1. Season chicken with spices. Sear in a skillet until golden, then set aside.
  2. Toast rice in the same pan, then add broth, BBQ sauce, and honey. Return chicken on top.
  3. Bring to boil, cover, and simmer for 15 minutes. Add vegetables and cook 5 more minutes.
  4. Remove from heat, let sit 5 minutes, then fluff rice and garnish with herbs.

Notes

Adjust seasoning and vegetables to taste for best results.
