Ingredients
  

Protein
  • 1 lb boneless, skinless chicken thighs or breasts
Grains
  • 1 cup long-grain rice
Broth & Sauces
  • 2 cups chicken broth
  • ½ cup bbq sauce (your choice)
  • ¼ cup honey
Spices & Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • to taste salt and pepper
Vegetables
  • 1 cup mixed vegetables (frozen or fresh)
Garnish
  • as needed chopped green onions or parsley

Method
 

  1. Season chicken with spices. Sear in oil until golden, then set aside.
  2. Toast rice in the same pan, then add broth, BBQ sauce, and honey. Return chicken on top.
  3. Bring to boil, cover, and simmer for 15 minutes. Add vegetables, cover, and cook 5 more minutes.
  4. Let sit 5 minutes, then fluff rice and garnish with green onions or parsley before serving.

Notes

Adjust seasoning and vegetables to taste for best results.
