  • 2 cups cooked chicken, shredded Leftover chicken works great for this recipe; just make sure to warm it up thoroughly.
  • 1/2 cup honey BBQ sauce
  • 4 large flour tortillas
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup shredded cheese (cheddar or pepper jack) You can customize these wraps by using different types of cheese.
  • 1/4 cup red onion, thinly sliced
  • to taste salt and pepper
  • optional avocado slices for garnish

Method
 

  1. Combine shredded chicken with honey BBQ sauce in a mixing bowl.
  2. Preheat grill or grill pan over medium heat.
  3. Lay flour tortillas flat on a clean surface.
  4. Place chicken mixture on the grill and cook for 5-7 minutes, stirring occasionally.
  5. Remove grilled chicken from heat and let cool slightly.
  6. Lay lettuce, tomatoes, cheese, and red onion onto each tortilla.
  7. Add BBQ chicken mixture on top of the vegetables.
  8. Add avocado slices for garnish, if desired.
  9. Roll tortillas tightly, folding in the sides to secure the filling.
  10. Serve immediately or wrap in foil.

Notes

For a spicier kick, use a spicy BBQ sauce or add a dash of hot sauce to the chicken mixture.
