Ingredients
  

Chicken
  • 2 boneless, skinless chicken breasts
Marinade
  • 2 tablespoons olive oil
  • 2 limes Zest and juice of
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • to taste Salt and black pepper
Rice & Avocado
  • 2 cups cooked white or jasmine rice
  • 2 ripe avocados, diced
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 cup cherry tomatoes, finely chopped (optional)

Method
 

  1. Whisk together olive oil, lime zest, lime juice, honey, garlic, cumin, salt, and pepper.
  2. Coat chicken with marinade; let sit for 20 minutes.
  3. Heat skillet over medium-high heat.
  4. Cook chicken 5–6 minutes per side until cooked.
  5. Remove from heat, let rest, then slice into strips.
  6. Toss diced avocado with salt and cilantro.
  7. Layer rice onto a plate or into a ring mold.
  8. Top with sliced chicken, then avocado mixture.
  9. Finish with cherry tomatoes and drizzle with honey-lime juices.

Notes

Adjust honey and lime to your taste preference.
