Method
- Whisk together olive oil, lime zest, lime juice, honey, garlic, cumin, salt, and pepper.
- Coat chicken with marinade; let sit for 20 minutes.
- Heat skillet over medium-high heat.
- Cook chicken 5–6 minutes per side until cooked.
- Remove from heat, let rest, then slice into strips.
- Toss diced avocado with salt and cilantro.
- Layer rice onto a plate or into a ring mold.
- Top with sliced chicken, then avocado mixture.
- Finish with cherry tomatoes and drizzle with honey-lime juices.
