Ingredients
  

Protein
  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup hot honey
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • to taste salt and pepper
Base
  • 2 cups cooked rice or quinoa
Vegetables
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice

Method
 

  1. Chop vegetables and season chicken with salt and pepper.
  2. Heat olive oil and sear chicken 5-6 minutes per side until cooked.
  3. Mix hot honey, soy sauce, and lime juice; add to the pan.
  4. Add vegetables during the last few minutes until tender.
  5. Serve chicken over rice or quinoa, drizzle with sauce.

Notes

Use fresh garlic for the best flavor.
