  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 14.5 oz diced tomatoes undrained
  • 1 cup cooked chicken shredded or cubed
  • 0.5 cup orzo pasta
  • 0.5 cup chopped spinach
  • 0.25 cup Kalamata olives pitted and halved
  • 2 tbsp lemon juice
  • to taste Salt and pepper
  • Feta cheese crumbled, for garnish (optional)

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more, until fragrant.
  4. Pour in chicken broth and diced tomatoes. Bring to a boil.
  5. Add orzo pasta and cook according to package directions (usually 8-10 minutes).
  6. Stir in cooked chicken, spinach, and Kalamata olives.
  7. Simmer for 2-3 minutes, until spinach is wilted.
  8. Stir in lemon juice. Season with salt and pepper to taste.
  9. Serve hot, garnished with feta cheese (optional).

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables like carrots or zucchini.
