Method
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more, until fragrant.
- Pour in chicken broth and diced tomatoes. Bring to a boil.
- Add orzo pasta and cook according to package directions (usually 8-10 minutes).
- Stir in cooked chicken, spinach, and Kalamata olives.
- Simmer for 2-3 minutes, until spinach is wilted.
- Stir in lemon juice. Season with salt and pepper to taste.
- Serve hot, garnished with feta cheese (optional).
Notes
For a richer flavor, use homemade chicken broth. You can also add other vegetables like carrots or zucchini.
