Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream softened butter, brown sugar, and granulated sugar until combined. Add egg and vanilla, mix until fluffy.
- Mix in flour, oats, cinnamon, nutmeg, baking soda, and salt until combined.
- Form 8 dough balls, place on baking sheet, press to 1 inch thickness, and bake for 10 minutes.
- Cool cookies on sheet for 20 minutes, then transfer to a rack to cool completely.
Notes
For softer cookies, do not overbake. Store in an airtight container.
