Ingredients
  

Dough
  • 1/2 cup butter (softened)
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg egg (at room temperature)
  • 1 1/4 cup old fashioned whole rolled oats
  • 1 cup AP flour
  • 1/4 tsp cinnamon
  • pinch nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Frosting
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream softened butter, brown sugar, and granulated sugar until combined. Add egg and vanilla, mix until fluffy.
  3. Mix in flour, oats, cinnamon, nutmeg, baking soda, and salt until combined.
  4. Form 8 dough balls, place on baking sheet, press to 1 inch thickness, and bake for 10 minutes.
  5. Cool cookies on sheet for 20 minutes, then transfer to a rack to cool completely.

Notes

For softer cookies, do not overbake. Store in an airtight container.
