Ingredients
  

Rice and Vegetables
  • 2 cups cooked rice
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 piece onion, finely chopped
  • 2 green chilies green chilies, slit
  • 0.5 cup mixed vegetables (peas, carrots, beans)
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • to taste Salt
  • 2 tablespoons chopped coriander leaves

Method
 

  1. Heat oil in a pan over medium heat.
  2. Add mustard seeds and cumin seeds; let them splutter.
  3. Add chopped onion and green chilies; sauté until translucent.
  4. Mix in vegetables, turmeric, garam masala, and salt; cook for 2-3 minutes.
  5. Add cooked rice, fold gently, cook for 3-4 minutes, then garnish with coriander leaves.

Notes

Use fresh cooked rice for best results.
