  • 4 pieces boneless, skinless chicken breasts
Grains
  • 1 cup long-grain white rice
Broth & Dairy
  • 2 cups chicken broth
  • 1 cup heavy cream
Vegetables
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
Fats & Oils
  • 1 tablespoon olive oil
Seasonings
  • to taste salt and pepper
Garnish
  • for garnish fresh parsley

Method
 

  1. Heat olive oil, season chicken, and sauté until golden, then set aside.
  2. Sauté onions and garlic in the same pan until translucent.
  3. Add rice and broth, bring to boil, add chicken, cover, and simmer for 20 minutes.
  4. Stir in heavy cream and peas, cook for 5 minutes, then garnish with parsley and serve.
