Method
- Place sweet potatoes in steamer basket with 1 cup water in Instant Pot; cook on high pressure for 15 minutes.
- Allow natural pressure release for 10 minutes, then quick release remaining pressure.
- For slow cooker, place sweet potatoes with 1/4 cup water; cook on low 6-8 hours or high 3-4 hours until tender.
- Remove, cool slightly, peel if desired, then drizzle with olive oil and season with salt and pepper. Add optional toppings.
Notes
Peeling is optional; sweet potatoes are naturally sweet and nutritious.
