Ingredients
  

dry pasta
  • 12 oz bow tie pasta uncooked
vegetables
  • 2 cups cherry tomatoes halved
  • 1/4 cup diced red onion
cheese
  • 1 cup bocconcini balls cut in half
greens
  • 1 cup packed spinach chopped finely
herbs
  • 1/2 cup chopped fresh basil
condiments
  • 3 tbsp prepared pesto
oils and citrus
  • 2 tbsp olive oil
  • Juice from 1/2 lemon lemon juice
seasonings
  • to taste salt
  • to taste black pepper

Method
 

  1. Cook the bow tie pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, red onion, bocconcini, spinach, and basil.
  3. Stir in pesto, olive oil, lemon juice, salt, and pepper until well coated.
  4. Chill in the refrigerator for at least 10 minutes before serving.

Notes

For extra flavor, add a sprinkle of grated Parmesan cheese before serving.
