Method
- Cook the bow tie pasta according to package instructions, then drain and let cool.
- In a large bowl, combine cooked pasta, cherry tomatoes, red onion, bocconcini, spinach, and basil.
- Stir in pesto, olive oil, lemon juice, salt, and pepper until well coated.
- Chill in the refrigerator for at least 10 minutes before serving.
Notes
For extra flavor, add a sprinkle of grated Parmesan cheese before serving.
