Method
- Preheat oven to 350°F (175°C).
- Mix rice, chicken, broccoli, and carrots in a bowl.
- Combine broth, yogurt, garlic, onion, salt, and pepper; pour over mixture and stir.
- Transfer to a greased dish, top with breadcrumbs and drizzle with olive oil.
- Bake 25-30 mins, add cheese, bake 5 mins more. Serve warm.
