  • 2 cups cooked wild rice
  • 2 cups cooked, shredded chicken
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup sliced carrots
  • 1 cup low-sodium chicken broth
  • 1 cup Greek yogurt
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional for topping)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix rice, chicken, broccoli, and carrots in a bowl.
  3. Combine broth, yogurt, garlic, onion, salt, and pepper; pour over mixture and stir.
  4. Transfer to a greased dish, top with breadcrumbs and drizzle with olive oil.
  5. Bake 25-30 mins, add cheese, bake 5 mins more. Serve warm.
