- Preheat oven to 400°F (200°C). Bake sweet potatoes for 45-60 minutes until tender.
- Cook cranberries, apples, maple syrup, cinnamon, nutmeg, and salt until cranberries burst and apples soften, about 10-15 minutes.
- Cool sweet potatoes, halve lengthwise, and scoop out flesh, leaving skins intact.
- Mash sweet potato flesh with cranberry-apple mixture, add nuts and butter if desired, then stuff back into skins.
- Bake stuffed sweet potatoes for 15-20 minutes until heated through. Serve warm.
Notes
For extra flavor, sprinkle with additional nuts or a drizzle of maple syrup before serving.
