Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes
Cranberries
  • 1 cup fresh cranberries
Apples
  • 2 medium apples, peeled and diced
Maple Syrup
  • 1/4 cup maple syrup
Cinnamon
  • 1 teaspoon cinnamon
Nutmeg
  • 1/2 teaspoon nutmeg
Chopped Nuts
  • 1/4 cup chopped pecans or walnuts (optional)
Salt
  • to taste salt
Butter or Coconut Oil
  • 2 tablespoons butter or coconut oil (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Bake sweet potatoes for 45-60 minutes until tender.
  2. Cook cranberries, apples, maple syrup, cinnamon, nutmeg, and salt until cranberries burst and apples soften, about 10-15 minutes.
  3. Cool sweet potatoes, halve lengthwise, and scoop out flesh, leaving skins intact.
  4. Mash sweet potato flesh with cranberry-apple mixture, add nuts and butter if desired, then stuff back into skins.
  5. Bake stuffed sweet potatoes for 15-20 minutes until heated through. Serve warm.

Notes

For extra flavor, sprinkle with additional nuts or a drizzle of maple syrup before serving.
