Sweet Potatoes
  • 4 medium sweet potatoes
Fruits and Sweeteners
  • 1 cup fresh cranberries
  • 1 large apple, diced (preferably granny smith)
  • 1/4 cup maple syrup
Spices and Dairy
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 cup greek yogurt (optional)
Salt and Nuts
  • to taste salt
  • for topping (optional) chopped walnuts or pecans

Method
 

  1. Preheat oven to 400°F (200°C). Bake sweet potatoes for 45-60 minutes until tender.
  2. Cook cranberries, apple, maple syrup, cinnamon, nutmeg, and salt until thickened, about 10 minutes.
  3. Cool sweet potatoes, halve lengthwise, and scoop out flesh, leaving a border.
  4. Mash flesh with cranberry-apple mixture, stir in Greek yogurt if desired, then refill skins.
  5. Bake stuffed potatoes for 15-20 minutes, then serve warm.

Notes

For extra crunch, sprinkle with chopped nuts before the final bake.
