Ingredients
  

Dairy
  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen cranberries, chopped
  • 1/2 cup chopped walnuts or pecans (optional) optional
Optional Topping
  • to taste Powdered sugar for dusting optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Beat cream cheese and butter until smooth, then add sugar and beat until fluffy.
  3. Mix in eggs one at a time, then add vanilla. Combine dry ingredients and fold into wet mixture.
  4. Fold in cranberries and nuts, pour into pan, and bake for 55-65 minutes.
  5. Cool in pan 10 minutes, then transfer to wire rack. Dust with powdered sugar if desired.

Notes

For best flavor, use fresh cranberries if available.
