Method
- Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- Beat cream cheese and butter until smooth, then add sugar and eggs, mixing well. Stir in vanilla.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to wet mixture.
- Fold in cranberries and nuts, then pour batter into pan. Bake for 55-65 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to wire rack. Dust with powdered sugar before serving.
Notes
For extra flavor, add a splash of orange zest to the batter.
