Ingredients
  

Dough
  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup fresh or frozen cranberries, chopped
  • 0.5 cup chopped walnuts or pecans (optional)
Optional toppings
  • Powdered sugar for dusting optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Beat cream cheese and butter until smooth, then add sugar and eggs, mixing well. Stir in vanilla.
  3. In a separate bowl, whisk flour, baking powder, baking soda, and salt. Gradually add to wet mixture.
  4. Fold in cranberries and nuts, then pour batter into pan. Bake for 55-65 minutes until a toothpick comes out clean.
  5. Cool in pan for 10 minutes, then transfer to wire rack. Dust with powdered sugar before serving.

Notes

For extra flavor, add a splash of orange zest to the batter.
