Method
- Preheat oven to 350°F (175°C). Boil potatoes until tender, then drain and cool.
- Mix sour cream, cream cheese, melted butter, cheddar, green onions, garlic, onion, salt, and pepper.
- Add cooked potatoes to the mixture and combine. Transfer to a greased baking dish.
- Mix cornflakes and Parmesan, sprinkle over top, then bake for 30-35 minutes until golden.
- Let cool briefly before serving. Enjoy!

For extra flavor, add cooked bacon or chopped herbs.
