Ingredients
  

Potatoes
  • 3 pounds potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 cup cream cheese, softened
  • 1/2 cup butter, melted
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup crushed cornflakes
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Preheat oven to 350°F (175°C). Boil potatoes until tender, then drain and cool.
  2. Mix sour cream, cream cheese, melted butter, cheddar, green onions, garlic, onion, salt, and pepper.
  3. Add cooked potatoes to the mixture and combine. Transfer to a greased baking dish.
  4. Mix cornflakes and Parmesan, sprinkle over top, then bake for 30-35 minutes until golden.
  5. Let cool briefly before serving. Enjoy!

Notes

For extra flavor, add cooked bacon or chopped herbs.
