- Pat steaks dry, season with salt and pepper. Sear in hot skillet 3-4 mins per side. Add butter, garlic, and herbs; baste steaks. Rest for 5-7 mins.
- Melt butter in same skillet, sauté minced garlic 1 min. Add cream, Parmesan, mustard, paprika, salt, and pepper. Simmer until thickened.
- Slice steaks against grain, top with sauce, and serve.
