Meat
  • 2 pieces ribeye steaks about 1 inch thick
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, smashed
  • 2 sprigs fresh rosemary or thyme
  • salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/4 cup parmesan cheese, grated
  • 1 teaspoon dijon mustard
  • salt and black pepper to taste
  • 1/4 teaspoon smoked paprika (optional)

Method
 

  1. Pat steaks dry, season with salt and pepper. Sear in hot skillet 3-4 mins per side. Add butter, garlic, and herbs; baste steaks. Rest for 5-7 mins.
  2. Melt butter in same skillet, sauté minced garlic 1 min. Add cream, Parmesan, mustard, paprika, salt, and pepper. Simmer until thickened.
  3. Slice steaks against grain, top with sauce, and serve.

Let the steak rest before slicing for juiciness.
