- Heat olive oil in a skillet over medium-high heat. Cook beef until browned. Remove and set aside.
- Add mushrooms and onion to the skillet. Sauté for 5-7 minutes until softened.
- Add garlic and cook for another minute until fragrant.
- Pour in beef broth. Stir in Dijon mustard and Worcestershire sauce. Simmer, scraping up browned bits.
- Return beef to the skillet. Season with salt and pepper. Reduce heat, cover, and simmer for 15-20 minutes.
- Whisk together softened cream cheese and sour cream until smooth.
- Remove from heat. Stir the cream cheese mixture into the beef mixture until creamy. Do not boil.
- Taste and adjust seasonings if needed.
- Serve over zucchini noodles or cauliflower rice. Garnish with parsley.
Notes
For a richer flavor, use bone broth instead of regular beef broth.
