  • 1 pound ground beef
  • 1 tablespoon butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 6 ounces cream cheese softened
  • 2 cups shredded cheddar cheese
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 0.25 tsp mustard powder

Method
 

  1. Brown ground beef in a pot, drain fat.
  2. Add butter, onion, and garlic; cook until softened.
  3. Pour in chicken broth and simmer.
  4. Add cream cheese and stir until melted.
  5. Pour in heavy cream, add salt, pepper, paprika, and mustard powder.
  6. Add cheddar cheese, stir until melted, simmer for 5 minutes.

Notes

For a thicker soup, add a small amount of xanthan gum.
