  • 1 lb ground beef (80/20)
  • 1 cup shredded cheddar cheese
  • 0.5 cup diced onion
  • 2 cloves garlic, minced
  • 0.5 cup diced bell pepper
  • 2 tbsp tomato paste
  • 0.5 tsp paprika
  • 0.5 tsp cumin
  • Salt and pepper to taste
  • 0.25 cup heavy cream or 2 oz cream cheese
  • Fresh parsley, chopped
  • Fresh chives, chopped

Method
 

  1. Cook ground beef in a skillet over medium-high heat, drain excess fat.
  2. Add onion, garlic, and bell pepper; sauté until softened.
  3. Stir in tomato paste, paprika, cumin, salt, and pepper; simmer.
  4. Reduce heat, stir in heavy cream or cream cheese, then cheddar cheese until melted.
  5. Remove from heat, garnish with parsley or chives, and serve hot.

Notes

For a spicier dish, add a pinch of red pepper flakes.
