Ingredients
  

Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into bite-sized pieces
Seasoning
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Alfredo Sauce
  • 4 oz cream cheese softened
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter
  • 2 cloves garlic minced
  • 1/4 tsp garlic powder
  • 1/4 tsp Italian seasoning
Serving
  • Keto-friendly noodles or zucchini noodles (zoodles)
  • Optional: chopped parsley for garnish

Method
 

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a skillet, add chicken, and cook until browned (5-7 minutes). Remove and set aside.
  3. Melt butter in the same skillet, add garlic, and cook until fragrant (1 minute).
  4. Stir in cream cheese until melted and smooth.
  5. Pour in heavy cream and bring to a simmer. Reduce heat to low.
  6. Add Parmesan cheese, garlic powder, and Italian seasoning. Stir until smooth and thickened (2-3 minutes).
  7. Add the cooked chicken back into the skillet and stir to coat with the Alfredo sauce.
  8. Serve over keto-friendly noodles or zucchini noodles (zoodles).
  9. Garnish with chopped parsley, if desired.

Notes

For a richer flavor, use freshly grated Parmesan cheese. Adjust seasonings to your preference.
